I've always loved banana bread. Something about it being made up of a fruit somehow constitutes me stuffing my face with it. Never a bad thing...These past few months I have experimented with a few recipes but nothing has taken the cake (or bread) like this one. I found the recipe on Allrecipes.com (). Tried it and loved it but decided I may be able to make it better. My father loves my new banana bread and if it can pass Gregg, it can pass anyone. Below are some pictures followed by the Emily version of this recipe. I encourage you to add your own changes according to what you like best...but most of all share it with those you love! (They will never speak to you again if you do not....)
Emily's Banana Bread Ingredients: 1/2 cup melted butter 1 cup white sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup vanilla yogurt + 1/2 teaspoon baking soda 1/2 cup chopped walnuts 2 medium bananas, sliced Directions: Preheat the over to 350℉ and grease a 9x5 inch loaf pan. Lightly dust with flour. In a large bowl (or your Kitchen Aid mixer) stir together melted butter and sugar. Add the eggs and vanilla. Mix well. Combine flour, baking soda, and salt separately in a small bowl and slowly add to large bowl. Now add the yogurt and baking soda mixture, walnuts, and bananas. Spread evenly into prepared loaf pan. Bake for 50-60 minutes or until toothpick inserted into the center of the loaf comes out clean. Cool loaf in pan for about 10 minutes then transfer to a wire rack to cool completely. Enjoy! I love this recipes because the sliced bananas really give it a flavor kick. Most banana recipes called for mashed bananas but this is SO much better. For my most recent batch I sprinkled the batter with brown sugar and some cinnamon before I put it in the oven...this gives it such a sweet and yummy crust!
